A barn in Gloucester County, a tented backyard in Brandywine Hundred, a rehearsal dinner that wants a door and a bar. The same twelve-hour brisket for all three, plated or passed, from whichever smokehouse suits the day. You tell us the shape of it; we bring the pit.
The Big Feast is the reception: every smokehouse meat — brisket, ribs, pulled pork, chicken, turkey, ham — slow-smoked wings, three sides, cornbread and brioche, dessert from Hill Donut Co., priced per guest. Around it, salad trays and appetizer trays for cocktail hour, and pans of brisket and ribs for the late-night table. Full service with servers and on-site cooking, or a styled drop-off buffet.
The Wilmington tavern has private rooms with their own doors and a full bar with craft cocktails, beer and wine. The room, the pit and the bar sit under one roof, which makes the night before the wedding the easy one.
Send the catering desk the shape of the day and we call back within a day with a menu and a number. When it feels right, a 50% deposit holds the date and the balance is due on the day; weddings inside seven days are paid in full. No service fee; a 2.9% card fee on whatever is paid online. Sales tax follows the venue: none in Delaware, 6.625% in New Jersey. Either smokehouse can cook it — that part is ours to sort.
