Post-oak goes on at midnight. Twelve hours later the brisket comes off dry-rubbed, bark on, shaved or chopped to order. That is the whole method: oak, time, salt, pepper, no shortcuts. The ribs are dry-rubbed baby backs with an apple cider glaze. Pulled pork is hand-pulled. The turkey breast is honey-brined before it sees smoke. Chef David Wiederholt trained at the Culinary Institute of America and took first place at the Philly Burger Brawl, which is why the burger list is as serious as the smoker.
