Post-oak goes on at midnight. Twelve hours later the brisket comes off dry-rubbed, bark on, shaved or chopped to order. That is the whole method: oak, time, salt, pepper, no shortcuts. Platters come with two smokehouse sides, a house salad and garlic brioche. The D&S burger took first place at the Philly Burger Brawl.
