Real BBQ in South Jersey used to mean a drive. The Mullica Hill smokehouse sits on US 322 in the middle of Gloucester County, with the brisket on the pit since midnight and the picnic grove open all summer.
Post-oak goes on at midnight. Twelve hours later the brisket comes off dry-rubbed, bark on, shaved or chopped to order. That is the whole method: oak, time, salt, pepper, no shortcuts. Chef David Wiederholt trained at the Culinary Institute of America, took first place at the Philly Burger Brawl and was featured in Philadelphia Magazine. He runs both kitchens.
