### How much for a crowd

With a per-guest package, exactly the head count. With pans: 1 lb of meat serves 3, a half pan is 4 lb and serves 12, a full pan is 8 lb and serves 24. For 20 people, one full pan of meat and two half pans of sides; for 50, two full pans and a half pan of meat and four or five pans of sides; for 100, double that.

### Catering policies

- Minimum: 10 guests for a per-guest package. Pans, trays, Pit Master combos, salad trays, appetizer trays and donut boxes have no minimum — any size.
- Notice: Same-day for smaller orders (up to 24 guests or 400.00 in pans and trays, 4 hours' notice); a day's notice for anything bigger. Same-day serving time must be at least 4 hours out and inside kitchen hours. Anything bigger or sooner: call the catering desk at (856) 285-4494.
- Day-ahead items: Breakfast sandwiches & garlic ranch potato bites, French toast breakfast, Pancake breakfast, Brunch Deluxe, Hill Donut Co. donut box, Hill Donut Co. donut hole box — baked the morning of the event at Hill Donut Co.
- Deposit and balance: More than 7 days out, a 50% deposit paid online holds the date; the final headcount and the balance are due 7 days before the event. Inside 7 days the order is paid in full online.
- Fees: No service fee and no gratuity is added; an optional tip is up to the guest. Card payments carry a 2.9% card fee on whatever is charged by card.
- Sales tax: Sales tax follows the event address: 6.625% on a New Jersey event; nothing collected online for a Delaware event; nothing collected online for a Pennsylvania event; nothing collected online for anywhere else. Anything that applies elsewhere is handled on the day.
- Delivery: Delivery is available. The fee depends on distance; we add it to your order once we confirm it and charge it to the card on file. Delivery orders start at 100.00 of food; pickup can be any size. There is no free delivery radius and no published fee.
- Pickup: Pickup from either kitchen is free: 1845 Marsh Road, Wilmington, DE 19810 or 1 S. Main Street, Mullica Hill, NJ 08062.
- Serviceware: Plates, cutlery and napkins are not in the food price: 1.25 a person. A chafing set is 19.00. Serving utensils (tongs, spoons) are free on request. Setup is priced by the event and confirmed on the call.
- Kitchen: The guest never picks a kitchen. Either smokehouse can cook the order; 322 BBQ assigns Wilmington or Mullica Hill to the date and address after booking.
- Picks: Package meat and side picks are chosen when booking online and confirmed by phone afterwards.
- Busy season: June and December weekends fill early.
- Custom events: Weddings, full service with staff, a bar, the food truck and events at the restaurants are quoted by the catering desk, not booked online.

The turkey breast is honey-brined before it sees smoke. **A smokehouse with a bar** Wilmington is the tavern.
