Have you ever wondered why the steak at a great steakhouse can taste so much better and more tender than the steaks you pull off your backyard grill? Or why they cost so much more?

Two little words: dry aging.

Dry aging is the process by which large cuts of beef are aged in a temperature & humidity controlled environment for 30 days at David & Sons before being trimmed and cut into steaks. It's a process that not only helps the steak develop flavor, but also makes it far more tender than it would be completely fresh.

  • A Whole Bone In Ribeye has 7 bones
  • The smallest roast we recommend is 3 bones
  • Each bone feeds approximate 2 people - possibly more
  • Raw weight on a ribeye varies from 15-20+ LBS
  • Cost is $25.99 per lb dry aged or $16.99 for fresh
  • We can cut the bones off in one large piece and tie them back on so you get the benefit from roasting on the bone, then simply cut the string and slice.
  • We can leave the bones attached also but you will have to slice between them after cooking and expect your steaks to be around 2" Thick
